Protein Blender Muffins: Back-To-School Time Saver

I am a Brand Ambassador for Nuzest Usa and have included an affiliate link in this post that I receive a commission from purchases. My full disclosure policy

Back to School, YAY!

How were you the first week of school? For some of you, it’s been a few weeks and you probably have settled back into a routine and life is starting to take on its new normal for the next 8+ months.  For us Jersey peeps we have just finished up the hours’ long paperwork confirming that are a child is still the same child, with the same parents, living in the same house just another grade older.  After school activities have taken our chill summer nights away and we are anticipating the homework to come trickling in to add to our now more full to do list.  Oh, what happened to those preschool days where you just had to make sure they had a change of clothes and snacks.  My girls are now in fourth and eighth grade, and I remember from my now eighth grader. Third grade is where things start to become a little more challenging. More responsibilities are assumed, and that wonderful common core is in full swing.  I am happy that I got to go through it from Kindergarten-Seventh grade, or it could be a daunting task sitting down for homework.

Prep and Plan

I’ve been here before, so I thought this summer, “How can I make things a little easier?” Prep and Plan! That is my security blanket. I am an avid planner from our meals, schedule everything is done a month in advance.  So, late July early August it began. I gathered recipes for easy, healthy dinners so that I can feed my hungry brood and make Soccer and Field Hockey games and practices without sitting down at the end of the day feeling like I was just swept up in a Whirlwind.  I found these Blender Muffins on Cooking Light, but I had to change up the recipe a little to meet my daughter’s needs.  One daughter is lactose intolerant we have all adapted to a less dairy lifestyle in my home.  The other thing is protein. My middle daughter is a self-proclaimed Vegetarian except for hot dogs and tacos. (Yep! Hot dogs…sigh and slight eye roll) I am always trying to find ways to get my only fruit and veggie child to get more Protein.  After two experiments the first one didn’t turn out so well, I came up with these delicious muffins that feed everyone for a week, and I just have to make one batch.  You can make them in a variety like I did or just do one flavor.  I did the variety to mix it up during the week.

Convenient and Healthy

My tween & teen can grab and go in the morning, and she’s all set, and my middle can eat, and I know that she is getting everything she needs to start her day. I also made Egg Muffins which the in between child wants no parts of but my husband has found these convenient too as he is a Kindergarten teacher and is trying to remain on the clean eating plan that he has fully embraced over the summer months. My personal favorite is the Chocolate Walnut Muffins, but there are so many topping options you can do. We have Apple Chai, Chocolate Almond, Strawberry Chocolate, Strawberry Blueberry, Blueberry and next week going to give Mango and Banana a try. I hope you enjoy these fast, easy, yummy treats for your family, and if you try any new flavors, please let me know. I am always looking for ways to make meal time fun, healthy and tasty.

Add Some Fruit and Veggies in a Scoop

Nuzest has just come out with some great additions to their plant-based smoothie line. Now they have Fruit and Veggies which gives these protein muffins an extra punch of power for my girls.  Nuzest Just Fruits & Veg comes in three different flavors Wild Berry, Fresh Coconut, and Caco Mint. I used the Wild Berry in the protein muffins and they were delish. It’s also great for their after school needs post field hockey and soccer practice even as an easy tasty snack when they get home.  I love it because it is no artificial sweeteners, a great form of plant-based protein in their pea protein powder and an ingredient list of all real, junk-free ingredients that I recognize. Each scoop contains 5 fruits and 5 veggies and 9 essential amino acids. My oldest daughter is lactose and casein intolerant so this is easy for her to digest.  I rather they have fresh, fruits and veggies but I can find comfort in the Nuzest Just Fruit & Veg Smoothies and it also adds a great flavor to the protein muffins. Protein Pancakes

This is a sponsored post. I received this product in exchange for a review there are also affiliate links that I make a commission. I make a commission off the links in this post and am a Nuzest USA Ambassador. I’d tell you if I didn’t like it and why. My Full Disclosure Policy

Pancakes, Bacon, and Eggs are like our Sunday morning go-to. I usually make a double batch on the weekend and freeze them for the lil diva’s breakfast during the week. I place each one in between parchment paper, so they are easy to pull out and toast just like your convenient frozen pancakes already made in the store. It allows me time in the morning to provide them with a homemade breakfast in minutes.

I have never really liked pancakes, but my daughters do. After flipping pancake after pancake and not being able to indulge in anything with wheat, guess what I want, crave, obsess? Yes, pancakes. You always want what you can’t have well not anymore. These pancakes are so easy to make, delicious and don’t add extra time and a whole lot of ingredients to your regular breakfast routine. I even had the kid and husband approved, and they gave it a two thumbs up. Since finding out about my wheat allergy, I have been making a conscious effort to eliminate wheat in my diet. I just feel so much better and can get the full benefit of living a healthy lifestyle.

These pancakes are a great alternative to your traditional pancakes. Its a very simple easy recipe to follow and most people have the ingredients.  I prefer to use plant-based protein powder, I use Nuzest Vanilla because I don’t do well with Whey because of my lactose intolerant and prefer not to have soy products. Nuzest Protein is more does not have lots of the artificial junk that can be found in most protein powders. Just as a personal preference. Like I said, these pancakes taste like the real deal. You can top them with your favorite fruit, nuts and I used Lakanto Maple Pancake Syrup, which is Sugar-Free, Calorie Free and tasted pretty decent its junk free made of Monk Fruit Sweetener. I have had sugar free pancake syrup before, and this is the best one yet.

Yummy, Protein Strawberry ShortCake

Strawberry Shortcake Revamped

Yep, I did it! Trying to make this Strawberry Shortcake but this was not an easy creation it took many attempts before I figured it out. Luckily you can reap the benefits of my trial and error.

I love Strawberry Shortcake when I was pregnant with my third I would call Cheesecake Factory 20 minutes before my husband got off work so it would be ready for him to pick up just as he passed it driving home. I specially requested everything in individual containers, and when he came back, I would welcome my Sweet delicious Strawberry Shortcake and then my sweet husband for giving in to my pregnancy cravings. Although I really can’t blame that on pregnancy because I still crave Cheesecake Factory Strawberry Shortcake, there are several problems with it now.

1) I am lactose intolerant, and that delicious Vanilla Icecream does not go well with my digestive system (it never has, but I care now)

2) That buttery, flaky, with a hint of sweetness, is not tolerable with my wheat allergy. Therefore, I no longer indulge in decadent goodness.

ProteinStrawberry Shortcake

On Memorial Day weekend we had a cookout at our house which we are known to do. Any holiday, weekend, moment calls for a barbecue in my house. I just love to grill. I didn’t say, my husband, because I am the grill master at my house. Although, he is coming around and did well last night as we fired up the grill. I was shocked he even volunteered.

Anyways, on Memorial Day, family friends brought over my favorite dessert- Strawberry Shortcake.  In that moment I experienced how my husband felt every time he would bring me home my favorite treat. I had to watch everyone else devour the Strawberry Shortcake. The next day I made it my mission to create a healthy yummy fat loss, gluten-free friendly Strawberry Shortcake and drum roll please…..here it is!

Raw “Caramel” Bites

RawCacaoCaramelBites.

Lately, all I have been posting is recipes and this blog is about food but not exclusively.  It’s just been a very busy season lately. With spring my little diva’s are in sports like lacrosse which are a huge time commitment. and I went back to school to get my second degree in Fitness and Exercise Science and Advanced Personal Training which is a big time commitment.I have a toddler which is a big time commitment. Needless to say my thoughts, although I still have them have been fleeting and I have no time to capture them and post but I am working on it.   I still have time to dabble in the kitchen though and recipes are just easier to post then thought provoking inspirational post. Those for now are captured in my journal till I can figure out a way to make some time to publish regularly here. So please forgive me for overwhelming you with my kitchen experiments and favorite recipes. I promise I will get to some juicy content very soon as soon as I figure out how to navigate this season of life better.

Anyways, this weekend I was meal prepping and something that I had saw on Facebook hand inspired me (yes, I make time to scroll through social media but not post. I know I need to prioritize) moving on. You know those “Recipe Video’s” that every day become more popular. Its a 45 second video clip of someone making an amazing looking treat, meal or whatever. There are a few pages that are very well know and popular. Anyways, I was scrolling and I saw one from Food Matters for a Raw Caramel Slice. It looked delicious and I mental noted and shared it to my timeline to make in the future.  The future came last Saturday, I was meal planning and I decided for a treat to add the ingredients to my grocery list.

EnjoyingRawCacaoBites

Now, have you every actually attempted to make one of those video clip foods? I don’t know about you but mine don’t always turn out how the video did. For some reason I think it takes them a lot longer than 45 seconds to make them in real life, ha ha. No, but there is always something a little off about the recipe when I attempt it.   This one I found SUCCESS and it was oh so delicious success.  In hindsight I would change the measurement of one ingredient and add one ingredient (which I did in the recipe here)  but other than that it was simple and actually looks like the last shot in the video clip.  I also would highly recommend it and so would my toddler (please excuse the hair it was Sunday, wash and twist night at my house). If you’re looking for a naturally sweetened chocolate indulgence that requires no baking this is the treat for you. This is my adaptation of the Raw Caramel Slice. Please give it a try and let me know what you think?

Cranberry-Orange Yogurt Cookies

Cranberry-Orange (1)

Another, kitchen experiment from lack of ingredients and a little snowed in boredom.  My lil diva’s love to do craft, cook, play games. After a four day weekend all of those things were exhausted with the exception of baking.  We had almost made it through the entire weekend without indulging. Since, beginning this weight loss journey I have been making a lot of lifestyle changes.  Trying to be wheat and gluten free due to sensitivities, drastically reducing the amount of processed sugar my family and I consume and showing my girls that healthy eating does not mean lack of flavor and treats.  So, when I ran out of all other ideas I turned to my favorite cookbook, social media.  Beyond Fit Mom, is the workout plan that I use and she always has fat loss friendly recipes that actually taste good. Just because it’s good for you doesn’t mean it needs to lack in taste.  If that was the case I would not be able to have lost 45 pounds in 6 months because I love food and flavor way too much.

These “Cookies” are more like little cakes.  I actually gave my daughter one for breakfast this morning. She thought Mom had temporarily lost it giving out “cookies” for breakfast. But they are perfect for on-the-go breakfast, snack or after dinner treat.  You can use any fruit, Beyond Fit Mom used blueberries, which we were out of and you don’t go out in a snow storm for blueberries. We did have dried cranberries, which I hydrated in water, oranges, bananas, apples and pears.  I didn’t use every fruit in the house but I think all of these would be delicious substitutes for blueberries.  They don’t all have the same antioxidant qualities, which is why I went with the dried cranberries and the orange was because I personally love cranberry orange-ANYTHING! The combination with Almonds and Chai Spice made this an absolute delicious treat.  If you make them please let me know if you substituted the fruits for anything different I am all about experimentation.
