Protein Blender Muffins: Back-To-School Time Saver

Back to School, YAY!

How were you the first week of school? For some of you, it’s been a few weeks and you probably have settled back into a routine and life is starting to take on its new normal for the next 8+ months.  For us Jersey peeps we have just finished up the hours’ long paperwork confirming that are a child is still the same child, with the same parents, living in the same house just another grade older.  After school activities have taken our chill summer nights away and we are anticipating the homework to come trickling in to add to our now more full to do list.  Oh, what happened to those preschool days where you just had to make sure they had a change of clothes and snacks.  My girls are now in fourth and eighth grade, and I remember from my now eighth grader. Third grade is where things start to become a little more challenging. More responsibilities are assumed, and that wonderful common core is in full swing.  I am happy that I got to go through it from Kindergarten-Seventh grade, or it could be a daunting task sitting down for homework.

Prep and Plan

I’ve been here before, so I thought this summer, “How can I make things a little easier?” Prep and Plan! That is my security blanket. I am an avid planner from our meals, schedule everything is done a month in advance.  So, late July early August it began. I gathered recipes for easy, healthy dinners so that I can feed my hungry brood and make Soccer and Field Hockey games and practices without sitting down at the end of the day feeling like I was just swept up in a Whirlwind.  I found these Blender Muffins on Cooking Light, but I had to change up the recipe a little to meet my daughter’s needs.  One daughter is lactose intolerant we have all adapted to a less dairy lifestyle in my home.  The other thing is protein. My middle daughter is a self-proclaimed Vegetarian except for hot dogs and tacos. (Yep! Hot dogs…sigh and slight eye roll) I am always trying to find ways to get my only fruit and veggie child to get more Protein.  After two experiments the first one didn’t turn out so well, I came up with these delicious muffins that feed everyone for a week, and I just have to make one batch.  You can make them in a variety like I did or just do one flavor.  I did the variety to mix it up during the week.

Convenient and Healthy

My tween & teen can grab and go in the morning, and she’s all set, and my middle can eat, and I know that she is getting everything she needs to start her day. I also made Egg Muffins which the in between child wants no parts of but my husband has found these convenient too as he is a Kindergarten teacher and is trying to remain on the clean eating plan that he has fully embraced over the summer months. My personal favorite is the Chocolate Walnut Muffins, but there are so many topping options you can do. We have Apple Chai, Chocolate Almond, Strawberry Chocolate, Strawberry Blueberry, Blueberry and next week going to give Mango and Banana a try. Add Some Fruit and Veggies in a Scoop

Nuzest has just come out with some great additions to their plant-based smoothie line. Yummy, Protein Strawberry ShortCake

Strawberry Shortcake Revamped

Yep, I did it! Trying to make this Strawberry Shortcake but this was not an easy creation it took many attempts before I figured it out. Luckily you can reap the benefits of my trial and error.

I love Strawberry Shortcake when I was pregnant with my third I would call Cheesecake Factory 20 minutes before my husband got off work so it would be ready for him to pick up just as he passed it driving home. I specially requested everything in individual containers, and when he came back, I would welcome my Sweet delicious Strawberry Shortcake and then my sweet husband for giving in to my pregnancy cravings. Although I really can’t blame that on pregnancy because I still crave Cheesecake Factory Strawberry Shortcake, there are several problems with it now.

1) I am lactose intolerant, and that delicious Vanilla Icecream does not go well with my digestive system (it never has, but I care now)

2) That buttery, flaky, with a hint of sweetness, is not tolerable with my wheat allergy. Therefore, I no longer indulge in decadent goodness.

ProteinStrawberry Shortcake

On Memorial Day weekend we had a cookout at our house which we are known to do. Any holiday, weekend, moment calls for a barbecue in my house. I just love to grill. I didn’t say, my husband, because I am the grill master at my house. Although, he is coming around and did well last night as we fired up the grill. I was shocked he even volunteered.

Anyways, on Memorial Day, family friends brought over my favorite dessert- Strawberry Shortcake.  In that moment I experienced how my husband felt every time he would bring me home my favorite treat. I had to watch everyone else devour the Strawberry Shortcake. The next day I made it my mission to create a healthy yummy fat loss, gluten-free friendly Strawberry Shortcake and drum roll please…..here it is!

Lemon Coconut Protein Chia Pudding

It sounds good, right? Well it is absolutely amazing! I have been dabbling in Chia Seed flavors lately. One because it is so good; second it is really easy and third it will kill a sugar craving and leave you full and satisfied.  It’s the perfect snack, breakfast!  I’ve made some questionable flavor combinations but this one by far is the yummiest! I had to share.

Chia Seed is also very beneficial it is rich in fiber, omega-3 fats, protein, vitamins and minerals.  Some benefits of Chia seeds are:

  • Great for your Skin and Aging- it contains antioxidants that help accelerate skin repair and also inhibit skin from future damage.
  •  Great for digestion- Chia seed is very-high in fiber it is said to contain about 11 grams per ounce. Meaning one serving of Chia Seed can be your recommended fiber intake for the day! Fiber is critical for your body to help it balance your insulin levels and known as a blood sugar balancer.
  • Great for your Heart Health– Chia Seed has been know to:

    – reverse inflammation,

    – regulate cholesterol and lower blood pressure make it extremely beneficial to consume for heart health.

    – reversing oxidative stress

    *according to an article published in the journal Reviews on Recent Clinical Trials:

  • Great for treatment of Diabetes– A study done came to the conclusion that eating chia seeds entirely inhibited the start of dyslipidemia and insulin resistance. There has been claims that it can halt or reverse diabetes. (I’m not making them but some researchers have been bold enough to come to that conclusion after laboratory testing.
  • Great for an extra Boost Your Energy & Metabolism- The addition of chia seeds will help boost your metabolism and burn belly fat.  It reduces visceral adipose tissue also known as belly fat tissue which has an effect on your ability to burn calories.

  • Great to help you Build Muscle & Lose Weight- Chia seed is an excellent plant based protein. It has been recommened for people wanting to burn fat, get lean muscle and balance blood sugar levels.

    Lemon Coconut Protein Chia Pudding

I lift really heavy and have a high protein allocation in my diet so I am always trying new protein based treats.  I also love it for my daughter because it’s a wholesome meal in the morning and they can just grab their jar and go!  I don’t let them take it to school because of the glass but they each have one and just unscrew the lid and eat.  It’s nice for those busy school day mornings.  I don’t know about you but I am prepping for Back To School so testing out new flavors to keep them interested has been fun!  They can even make this on their own which my oldest one loves to do.

I have been going Lemon crazy lately. I am not sure if it’s because its summer time and its refreshing. Citrus is also great for helping absorb iron and it just makes everything taste yummy. From your bowl of fruit to your piece of chicken fresh squeezed lemon juice is always a great addition to a meal.  It’s versatility also allows for a lot of different flavor combinations.  The great thing about this pudding too is the Coconut is not overpowering.  If you don’t like coconut omit it and you have a Lemon “Meringue”ish Chia Pudding.
