Mango Thai Chicken Salad with Spicy Peanut Sauce

I used to be a plain salad, same salad kind of girl. I would get your standard mixed green or Ceasar Salad.  Then I began eating more protein and produce and before I found all that variety had to offer I got stuck in the same salad rut.  Funny enough my husband who is a same meal kind of guy. Like when I met him he would only eat “American” food defined by him as Hamburgers, Spaghetti (Technically not American) and Fried Chicken.  Anyways, he introduced me to adding fruit into my salad. He used to put strawberries, grapes, blackberries, apples and I thought “Eew, how gross” well you know the adage-Don’t knock it till you try it. Well I was pleasantly surprised. Now I am livening my salads up with different types of nuts, cheese, fruits, and dressings. I especially love homemade dressings I feel they have more flavor and can be fun and inspiring to make.  So, usually I make my own dressings.

Peanut Dressing

This weekend I was inspired by a salad I had picked up from Wawa. (Wawa is a NJ/East Coast convenient store chain that offers some made to order meals and express salads, etc.) We were busy, busy and the snacks I had brought were gone. We were still running errands and was starving.  I had my husband stop at Wawa and chose a not-great-for-you but better-than-a-fast-food-meal, salad.  It was pretty good but I knew I could do better and I did.  Got home, did some digging on Pinterest and found a good base for my Spicy Peanut Dressing. As with most recipes I find I reinvented it and made a much healthier option.  I wanted a dressing that was Sugar Free (of course) and I used Coconut Oil because it’s a healthier fat then most of the other dressing recipes I found.  I also kind of made up the salad as I went along because honestly anyone can throw a salad together. Grilled some chicken with my amazing 5-Spice Season and Ta-Da! This was one of those meals you kind of hum as you took each bite. Yes, that good! I hope you enjoy it as much as I did since I am a little bias.

No Carb Cheesecake

I have been carb cycling for 3 weeks this month and if you have been following have found some yummy recipes. I am actually in love with this type of meal plan now. I have found that it has given me amazing results, physically and internally. The first week I had to tweak my macros, meaning the amount of protein, fats and vegetables/fruits that I consumed and types.  Once I figured it out not only have I felt better than ever, I find myself eating more than ever. Yet, I am eating less calories and low carbs.  I have played with my meal plan schedule varying week to week.

For example, my first week I ate:

Low Carb, Low Carb, No Carb, Low Carb, No Carb, Low Carb, High Carb. I did this to ease me into this new lifestyle change.

The Second week, I started off with:

No Carb, No Carb, Low Carb, Low Carb, No Carb, No Carb, High Carb.

The third week of the month I ate how I wanted but still tend to eat lower carbs out of want but I didn’t plan my meals based on carbs.

Now I am here in my last week and my schedule is:

No Carb, No Carb, Low Carb, No Carb, No Carb, Low Carb. The No Carb days were intentionally scheduled on heaving lifting days.

I will do another post on my results but they are absolutely amazing and the week that I was off of Carb Cycling I only gained 1 pound, while on vacation at Disney. Seriously? Yes, Seriously!

I have been doing so well, haven’t been hungry, none of the side effects from lack of carbs. Last night was different. I wanted something sweet so I did a Google/Pinterest search and most of the results came up No Carb Cheesecake. I love cheesecake but don’t eat it very often. I had to give it a try. So, I wrote down the easy recipe and got one ingredient that was missing and then started working on the recipe. Instantly, I knew something was wrong. I was a little apprehensive because of the ingredients.  As I started to mix the ingredients together it became a big gooey ball of something that did not look anything like cheesecakes.  So, I added some Almond Milk which made it even worse then I added some Greek yogurt it started to workout then I added another 8 ounces of Neufetchel cheese.  I placed it in the greased pan and Ta-da bogus recipe was improved and created a yummy dessert.  You can serve it with Walden Farm Syrup or Fruit Spread and have Strawberry, Caramel, Chocolate or Blueberry No Carb Cheesecake. I enjoyed every bite without guilt and yumminess!

Fat Loss Friendly Butter Rum Cupcakes

I have been on a sugar detox for 14 days and being sugar free can make a girl do some crazy things ie. create a sugar free cupcake out of desperation for a after dinner treat. Detoxing has been extremely hard because there is sugar in everything. Things that you didn’t expect to have sugar in them there is. Of course, I know there is sugar in cupcakes, that’s why I love cupcakes. I have found doing this detox that sugar does have a mental and physical effect on me. The first two days, I had cravings and would end my days with headaches, which I don’t get. A week into the detox I had a really emotional down spell for several days being that I am a pretty optimistic person this was very challenging. Then the stuffy sinus’ and increased allergies. It is crazy that something so good, so satisfying, so sweet, (ha ha) can be have such a control of your body. I guess its not that crazy but until you go without something you never realize how much it is apart of your daily life.

After some trial and error I came up with a kid-friendly, husband approved, sugar craving satisfying dessert.  This experiment has made this journey a little more “sweeter” and easier to bear. It ended up being really tasty and just what I needed at the end of a busy day. It’s nice to have a treat that I can eat on this weight loss journey that I don’t have to worry about sabotaging my efforts or doing extra work to work it off. If I had to restrict myself from all that is good ie. treats I don’t think I would be able to live this lifestyle.  There has to be balance and compromise and this recipe is both and it is yummy.
