National Chocolate Ice Cream Day Tease with Nice Cream

Today is National Chocolate Ice Cream day which was bittersweet! Oh, how I would love to indulge in a Chocolate Fuge IceCream Sundae with Wet Walnuts, and Caramel Syrup.  (Imagine me Homer Simpson drooling) But that is no longer the case for me.  After many years suffering from digestive issues, I have found the culprits are Dairy Products and Wheat Products through the process of elimination and a prick allergy test. Can I tell you how much that STINKS?

I love dairy things cheese especially but all inclusive of yogurt and of course ice cream.  I could do without a glass of milk which my mom used to make me drink every morning before school, and I would complain because I told her it made me feel stick to my stomach.  I think if we knew then what we know now I would not have suffered from digestion pain for so many years.  

Substitute, Alternatives and Replacements

Now, there are such great alternatives that I have found at our local grocers. My absolute dairy-free ice cream is So Delicious Turtle Trails. I could sit and eat the whole point but trying to be focused on my goals. So, I tried this easy yummy dairy-free ice cream sandwich treat that everyone enjoyed.  If you’re a Pinterest Junkie like me I am sure you have heard of “Nice Cream” it is ice cream made out of frozen bananas.

I have created some good nice creams (I posted my Strawberry the other day), and I have created some awful flavor combination but after being at a Fitness Convention for four days it motivates you to make better choices. I am planning out my next six-week goal I decided to make a Protein Nice Cream.  It was very simple and just what I need to fill my Ice Cream craving.  Let me know what you think of it?

Veggie Frittata

 

This Veggie Frittata is so filling and who knew Brussels Sprouts and eggs could taste so good I truly think they are the star of this frittata. I am not a sweet breakfast kind of girl but I do love eggs and I am always loading them up with veggies from the recent produce haul.  This week I added lots of brussels sprouts, kale, and mushrooms.

Brussels Sprouts are so good for you. They have some special cholesterol-lowering benefits, especially when steamed. The fiber-related components are great for your digestive tract and result in lowering your cholesterol levels. Raw Brussels sprouts are helpful with cholesterol-lowering, but not as much as steamed Brussels sprouts. I actually really love Brussels Sprouts since I was a kid so, I had to try it. This recipe is really easy, really tasty and you look like a cooking rock star. I think some red peppers would make it tastier and going to try that next time.

Just a tip: It is very important not to overcook Brussels sprouts. Not only do they lose their nutritional value and taste but they will begin to emit the unpleasant sulfur smell associated with overcooked cruciferous vegetables. To help Brussels sprouts cook more quickly and evenly cut each sprout into quarters or slice them. The recipe is really easy and adds a new dish for breakfast even lunch if you like.

7 Reasons I Switched to Matcha Tea

 

Why did I switch from Coffee to Matcha Green Tea?

The last round of Bibles and Bootcamps had a different impact than it has in the past.  Unbeknownst to me while doing the daily devotions, meditations, and reflection during my last round of Bibles and Bootcamps, while my Beauties were overcoming their dependencies. I too ended my relationship with Coffee.

Some of you may have gasped if you know me well and know that before I shut off the Black Coffee tap cancer-fighting, I was up to a MINIMUM of 44 oz of black, bold brew coffee a day.  It had little to know the effect on me other than making my breath smell and keeping me dehydrated. There are lots of significant benefits for coffee, but for me, it wasn’t working.

I also ended my nasty gum chewing habit since quitting coffee. Recently, I have been trying different things to get me over that 2:30p hump. Which also becomes my snack time frenzy when I am tired.  I think we all do.

Late to the party

Now I know the Matcha Tea trend is old and yes, I am just jumping on board. I am just not a trendy type of girl I am either ahead of the trend or behind but never on trend.

Although, I am late to the party there have been a few teas that have caught my useful interest energy.

I Needed a Natural Energy

We all can use more energy in this world that we live in and although I eat well and exercise often.  I even try to get sleep enough sleep, but I wake up at 4:30 a.m every morning (sometimes whether I want to or not). Usually, I am in bed no later than 10 p.m.

Yes, I live off of six hours of sleep, and I start to feel it around 2:30p.  Some days I do nap but others I am chauffeuring diva’s or just living life, and a nap is not an option. Those are the days that I am looking for that extra energy boost I need.

When I stopped coffee, I was looking for another natural source that had other health benefits.  I have heard of Matcha, but it wasn’t until I tried Ujido Matcha Green Tea Powder that I was hooked.

I have written about the benefits of Polyphenols before and keeping this antioxidant in your diet can be very beneficial. I have never written specifically about the polyphenols known as EGCGs. EGCG is epigallocatechin-3-gallate (EGCG) which is a type of catechin (a group of flavonols that are high in antioxidants and plant based) that has been shown to have potent anti-cancer properties.

Matcha has been tested in the fight of several different cancers and has some positive effects.  Cancers like prostate, skin, lung, and liver cancer have proved conclusively with EGCG consumed against these cancers.

It needs to be noted that these studies were done in test tubes and did not necessarily translate to humans but there is high probability it can be an adequate defense.

Hamburger Salad with No Carb Buns

Hamburger Salad is a new take on classic meal

Hamburger Salad is one of those meals that without the bread has no carbs, but the bun is the second best part of the burger, am I right? Why have no carbs and your buns too? Week 2, of Carb Cycling and I have to say it is not going as bad as I had envisioned it before trying out this new way of eating.  It still requires the same amount of planning and prepping as my typical meal plan did. I am still eating lots of yummy food taking in 2300 calories of protein and produce.

Carb Cycling

I have just rearranged my meals to be lower in carbs or no carbs on certain days.  There is only one difference my high carb day is kind of like a “cheat day,” and I don’t believe in cheat days or partake in them. I think in the 80/20 rule and lots of grace. 80% of the time I eat proper portions and types of food and 20% of the time I indulge in a birthday cake, pizza, or a sweet treat that I want.

It’s all about balance when making a lifestyle changing, and when I hear diet, my rebellious nature starts making plans on how to avoid it.  When meal planning this week I thought what can I feed my family and not have to make a huge difference in what I am eating. Also, there has been a horrible lie spread around that healthy food has to be nasty. I am making it a point to prove that appalling myth false.

Eating Healthy on a Budget HACK

Hamburger salad is a monthly staple and really yummy. It’s on our 30 day favorite meals list which allows my family to basically eat 30 different meals a month. I have managed to make a list of about 30 (actually 43 meals) that my family loves and only one person may complain if I set it on the table. I use this when planning out my meals week-to-week.  I have been meal planning for years because it keeps me sane, I don’t have to worry about what I am making for dinner which is half the battle.

Saves on groceries

It keeps my grocery bill low and on budget by planning out my meals I can utilize what I already have and just get what I need. I am on a mission when I hit the grocery store because it is one of my least favorite chores to do is grocery shop. I like to get in and get done.  It also keeps everyone on one page. I am not the best meal “prep-per” its something that I am working on.

Easy to make

Hamburger Salad is super easy like all my meals. The thing that gives it pizzazz is the super easy sauce. It taste like a classic burger on a bed of lettuce and its a fun healthy way to eat a classic.  I replaced your classic hamburger bun with a Cloud Bread Bun which has less than 1g of carbs making this an excellent meal for a Carb Cycle No Carb day and very filling.  What’s a classic meal with a twist that your family loves?

Raw “Caramel” Bites

Lately, all I have been posting is recipes and this blog is about food but not exclusively.  It’s just been a very busy season lately. With spring my little diva’s are in sports like lacrosse which are a huge time commitment. and I went back to school to get my second degree in Fitness and Exercise Science and Advanced Personal Training which is a big time commitment.I have a toddler which is a big time commitment. Needless to say my thoughts, although I still have them have been fleeting and I have no time to capture them and post but I am working on it.   I still have time to dabble in the kitchen though and recipes are just easier to post then thought provoking inspirational post. Those for now are captured in my journal till I can figure out a way to make some time to publish regularly here. So please forgive me for overwhelming you with my kitchen experiments and favorite recipes. I promise I will get to some juicy content very soon as soon as I figure out how to navigate this season of life better.

Anyways, this weekend I was meal prepping and something that I had saw on Facebook hand inspired me (yes, I make time to scroll through social media but not post. I know I need to prioritize) moving on. You know those “Recipe Video’s” that every day become more popular. Its a 45 second video clip of someone making an amazing looking treat, meal or whatever. There are a few pages that are very well know and popular. Anyways, I was scrolling and I saw one from Food Matters for a Raw Caramel Slice. It looked delicious and I mental noted and shared it to my timeline to make in the future.  The future came last Saturday, I was meal planning and I decided for a treat to add the ingredients to my grocery list.

Now, have you every actually attempted to make one of those video clip foods? I don’t know about you but mine don’t always turn out how the video did. For some reason I think it takes them a lot longer than 45 seconds to make them in real life, ha ha. No, but there is always something a little off about the recipe when I attempt it.   This one I found SUCCESS and it was oh so delicious success.  In hindsight I would change the measurement of one ingredient and add one ingredient (which I did in the recipe here)  but other than that it was simple and actually looks like the last shot in the video clip.  I also would highly recommend it and so would my toddler (please excuse the hair it was Sunday, wash and twist night at my house). If you’re looking for a naturally sweetened chocolate indulgence that requires no baking this is the treat for you. This is my adaptation of the Raw Caramel Slice.
