Gluten-Free Almond Chocolate Dessert Pizza

This post is sponsored by Once Again, but the content and opinions expressed here are my own. My full Disclosure Policy

Once Again Amore Spread

I have a severe sweet tooth. It is probably my biggest vice. I can abstain from just about anything but dessert.  So while on this health journey, I had to discover a way to have my cake and eat it too.  Living a gluten-free lifestyle. It’s hard to find spreads and condiments that don’t contain wheat. As I have adopted a gluten-free lifestyle, I have found some tasty products that are gluten-free to satisfy my sweet tooth. I team up with Once Again to try their Amore Spread Almond with Cocoa and Milk.  I was amazed at the decadence of this chocolate spread.

Not your average Chocolate Spread

Once again is a company that you can trust for Certified Gluten-Free, Non-GMO Verified, Certified Organic, and vegan nut and seed butter. Once Again Nut Butter
also follows Fair Trade and Sustainability standards for their farm partners, suppliers, and prices. I love companies that are conscious about where their product is sourced and quality of the ingredients.  When my family tried the Once Again Organic Amore Almond Spread with Milk Chocolate, it was without question delicious.  It makes everything taste better, and it is healthier than other dessert butter in the market. We’ve used it as a dip for our popcorn, fruit, and gluten-free pretzels.  It was also a delicious spread on rice cakes as a snack.  So creamy and rich it is better than other hazelnut nut butter that is popular on the market.

Guiltless Dessert

The ingredients are much better for you.  I decided to make a Dessert Pizza for a Barbeque we were invited to, and it was a hit.  In less than 20 minutes and with minimal ingredients. We had a delicious dessert. Often people omit desserts when working towards their weight loss goals, but I believe in living a healthier lifestyle whether than being on a diet.  Which for me, includes desserts.  Using better ingredients and portion control dessert is a guiltless pleasure that everyone should enjoy in moderation.   Give the recipe a try and be a rockstar at your next potluck or for an easy dessert.

Do you care about the ingredients when it comes to your desserts?

Cassava Flour Tortillas are Grain Free, Nut Free, Gluten Free and Tasty

Grain Free and Gluten Free Cassava Flour Tortillas

I have been about 95% gluten-free for two years. (I make exceptions for donuts from time to time). Since going gluten-free, I have had to forego some foods, but I have gained so much. Minimal digestion issues, clearer skin, more energy, and I actually enjoy eating food again. The reason I stopped eating gluten is that I discovered an allergy to wheat using a prick test from my Allergist.  Since then, I have tried to remove it from my diet. When I do eat wheat if I have a runny nose, itchy eyes, throat, tongue, mouth, skin breakouts, and digestive issues usually constipation. Since removing wheat from my diet, I don’t experience any of those symptoms. I don’t believe in living life on a diet, but I do believe in honoring my temple. Eating wheat doesn’t serve me well, so for the last two years, I have been removing it and finding alternatives to wheat. I also enjoy experimenting in the kitchen to invent grain-free options to my old faves.

Tortillas are a staple purchase in my home.  My girls will wrap up anything for breakfast.lunch and dinner.  I was substituting my tortillas for the corn, but sometimes you want a soft flour tortilla.  Over the last few years, I have been able to figure out ways to swap recipes for gluten-free ingredients.  It’s all about the flour different gluten-free flours work well for different things. Like almond flour is great for cornbread but makes cakes a little gritty. Rice flour is great for frying and baking.

Cassava Flour is Easy to use with Gluten-Free Baking

I have been playing with Cassava flour for about a month, and I love it. It’s nut-free, grain free and gluten free. Very fine and easy to work with the Cassava is a root vegetable. Cassava flour is the whole root, simply peeled, dried and ground. So, last night I experimented and created this four-ingredient Cassava Flour Tortilla! It was effortless, and they turned out very tasty!  I am learning that just because it’s gluten-free doesn’t mean that I have to forego the things I love.  I have had some gluten free fails, but this one was a win! These are sturdy, pliable, and taste delicious when you stuff them with whatever you feel.

One thing that you have to consider when baking differently than you’re accustomed too is that flavor and texture won’t be exactly what you’re missing but if you can find an equal substitute give it a try.  I have made some wraps with these tortillas, and they held up well.  I also made a Dairy-free Enchilada bake that was tasty, and Cassava Tortillas held up fine for leftovers the next day.

So, if you’re looking for a gluten-free, grain-free, nut-free and dairy-free flour tortilla, I would give these a try! I am also sharing two recipes. Give my Enchilada Bake a try and let me know what you think?

Lemon Protein Mug Cake

If you love Lemons you will love this Lemon Protein Mug Cake! I love lemon! I have so many Lemon Recipes on my blog it has to be kind of apparent.  For the last three years, I have asked for a Meyer’s Lemon Tree for my Birthday to no avail maybe this will be the year I get it-hint hint fam! But even if I don’t fresh lemons will always be in my kitchen available to make a yummy treat and so many other benefits!

Lemon water is a popular fitness trend but do you know why?

Benefits of Lemons you may not have heard

There are lots of benefits to lemons but here are a few that people don’t often mention:

1.Great for Digestion-

That’s why the Lemon Water Trend began in America we are always looking for a solution to our digestive issues. According to Fox News Health, About 74% of Americans experience daily Gastrointestinal Discomfort. Some people are now looking for natural remedies and adding lemon- even if it’s in the form of Lemon Water to your diet can help aid your digestion. Lemons are an excellent source of soluble fiber which especially in the form of pectin which is a soluble fiber that helps slow down the digestion of sugar and starches meanwhile reducing your blood sugar levels.  You need to ingest a lot of lemon pulp and skin to get the fiber benefits lemons to offer.  That is why most people use juiced lemon to help increase their lemon pulp intake. Although, that is the theory most people don’t juice the required amount of lemons to help improve gut health if they did they would help with their digestion.

2. Great Anemia protection-

Any fruit that contains Vitamin C and Citric Acid is a great addition to someone who is trying to absorb iron that occurs in plant foods.  Helping people absorb more iron from their foods can be helpful for those who are Iron deficient.  Veggies rich in Iron like Kale, Greens, Broccoli coupled with lemons can be a powerhouse in getting helping with iron absorption from plants instead of animal sources of iron.

Adding more lemon to your diet will help you get the absorption from plant sources that is harder for us to absorb than animal sources of iron.  Helping add protection against anemia.

3. Great to prevent kidney stones-

According to News Medical Life Science, “They noted that there was an over four times rise of kidney stones among women and the incidence had doubled among men over these three decades.” Mostly because of the overprocessed American diet and our body and the lack of water and overconsumption of oxalates in our foods.

Lemons are a great natural remedy for chronic kidney stones.  Studies have concluded that the high levels of citric acid found in lemons help to increase urine volume and pH which makes it less likely for kidney stones to form. Consuming a minimum of half a cup of lemon juice daily can have these positive preventative effects on kidney stones.

4. Great for weight loss

This is probably the most common reason I found people drinking lemon water because they believe it helps them lose weight.  It does but not to the extent that you think. Studies have revealed Lemons have polyphenols (which I have written about before) that helps you lose weight but a healthy diet and exercise is necessary to achieve quantifiable results.

5. Great for your teeth

Studies have shown, The chemical properties of lemon are great for tooth pain, cleaning and cleaning your mouth naturally.  Seek a toothpaste with lemon in it or add a drop to your mouthwash routine. It’s great to eliminate the bacteria in your mouth and neutralizes bad breath.

6. Great for Internal Bleeding

This is something that really surprised me in my research. Lemons contain an antiseptic and coagulant effects that have helped stop internal bleeding.  Some people use it as a remedy for things like nosebleeds because of the coagulant effect.  Put some lemon juice on a cotton ball and apply to a nosebleed and watch it magically stop.

7. Soothes Respiratory Disorders

Lemons are a rich source of Vitamin C which makes them great to combat respiratory issues and breathing problems.  Drinking lemon juice in water, diffusing Lemon essential oils can help assist with breathing and respiratory disorders.

Not only does lemon have all these and so many more benefits but they taste great too!  Give this 90-second mug cake a try next time you are looking for a delicious lemon treat.

Were there any facts that surprised you about lemons?

Yummy, Protein Strawberry ShortCake

Strawberry Shortcake Revamped

Yep, I did it! Trying to make this Strawberry Shortcake but this was not an easy creation it took many attempts before I figured it out. Luckily you can reap the benefits of my trial and error.

I love Strawberry Shortcake when I was pregnant with my third I would call Cheesecake Factory 20 minutes before my husband got off work so it would be ready for him to pick up just as he passed it driving home. I specially requested everything in individual containers, and when he came back, I would welcome my Sweet delicious Strawberry Shortcake and then my sweet husband for giving in to my pregnancy cravings. Although I really can’t blame that on pregnancy because I still crave Cheesecake Factory Strawberry Shortcake, there are several problems with it now.

1) I am lactose intolerant, and that delicious Vanilla Icecream does not go well with my digestive system (it never has, but I care now)

2) That buttery, flaky, with a hint of sweetness, is not tolerable with my wheat allergy. Therefore, I no longer indulge in decadent goodness.

ProteinStrawberry Shortcake

On Memorial Day weekend we had a cookout at our house which we are known to do. Any holiday, weekend, moment calls for a barbecue in my house. I just love to grill. I didn’t say, my husband, because I am the grill master at my house. Although, he is coming around and did well last night as we fired up the grill. I was shocked he even volunteered.

Anyways, on Memorial Day, family friends brought over my favorite dessert- Strawberry Shortcake.  In that moment I experienced how my husband felt every time he would bring me home my favorite treat. I had to watch everyone else devour the Strawberry Shortcake. The next day I made it my mission to create a healthy yummy fat loss, gluten-free friendly Strawberry Shortcake and drum roll please…..here it is!
