Southwest Quinoa with Avocado Cilantro Dressing

Are you looking for a recipe that is really easy? Very Tasty? Healthy and Fresh? This is it. I don’t even know where I got this recipe but over the years I have made it my own.  I was raised in a faith that was vegetarian so a lot of our meals were plant based protein.  One of my favorite meals from childhood is called Haystacks which is very similar to this but no quinoa and refried beans instead of black beans. I think one day playing around in the kitchen as you know I often do, this recipe was born.  I started bringing it to functions for my potluck and everyone ask me the recipe. So, one day I sat down and wrote out exactly what I do but there are so many things that you can do with it, add to it.

This is a great meal to take for  Potlucks because it’s great for people with food allergies, or preferences. Swap a few ingredients and it can be Vegan or Vegetarian. Quinoa is gluten free friendly too and it taste so good.  Got lots of protein and iron too. I love making this all year long and it is really simple and easy. Everyone loves my Southwest Quinoa.  Another great thing is it freezes AWESOME! Can’t go wrong.  Top your salad, eat it with Tortilla chips, in corn or flour tortillas,casserole and even in Wontons with some cheese baked or fried its the best appetizer.  Its also one of those recipes you can adapt. Sometimes I add green enchilada sauce or red enchilada sauce instead of the avocado cilantro dressing and it takes on another flavor.  I am sure there are other ways I serve it but just can’t think of them at the moment but those are a few ideas. Its one of my families favorites. Let me know what your family thinks of it and other ways you end up serving it.

Fat Loss Friendly Butter Rum Cupcakes

I have been on a sugar detox for 14 days and being sugar free can make a girl do some crazy things ie. create a sugar free cupcake out of desperation for a after dinner treat. Detoxing has been extremely hard because there is sugar in everything. Things that you didn’t expect to have sugar in them there is. Of course, I know there is sugar in cupcakes, that’s why I love cupcakes. I have found doing this detox that sugar does have a mental and physical effect on me. The first two days, I had cravings and would end my days with headaches, which I don’t get. A week into the detox I had a really emotional down spell for several days being that I am a pretty optimistic person this was very challenging. Then the stuffy sinus’ and increased allergies. It is crazy that something so good, so satisfying, so sweet, (ha ha) can be have such a control of your body. I guess its not that crazy but until you go without something you never realize how much it is apart of your daily life.

After some trial and error I came up with a kid-friendly, husband approved, sugar craving satisfying dessert.  This experiment has made this journey a little more “sweeter” and easier to bear. It ended up being really tasty and just what I needed at the end of a busy day. It’s nice to have a treat that I can eat on this weight loss journey that I don’t have to worry about sabotaging my efforts or doing extra work to work it off. If I had to restrict myself from all that is good ie. treats I don’t think I would be able to live this lifestyle.  There has to be balance and compromise and this recipe is both and it is yummy.

Butternut Squash and Spinach Latkes

I love trying new things and also using what I have in the kitchen. The other day I was thinking about my friend and her amazing latkes and was inspired. I had some Butternut Squash that I really needed to use and always have Spinach. With a little imagination these latkes was born. They were tasty and hit the spot, packed with Vitamins and Nutrients and fat loss friendly. Butternut Squash is great sweet or savory because of it’s mild taste so it’s now a new tasty recipe of mine.

I have found another soup recipe that is absolutely delicious and fat loss friendly. I was not lying when I said I was a soup addict. Add a little avocado, cilantro and some Greek yogurt on top and you have a soup that is absolutely to die for. This is also totally gluten free too.

Shrimp Alfredo Spaghetti Squash

Spaghetti Squash to the rescue with this really easy Shrimp Alfredo Spaghetti Squash recipe. It’s been one of those days, the day was going great and then something unexpected happen. Your plans for the day go out the window and next thing you know it’s dinner time. If you’re a clean eater like I am that sometimes can be a little hard. I like to keep a few freezer meals on hand for occasions like this but sometimes that is not the option.  I had the pleasure of taste testing some of the products that WildTree provided. So, of course on a hectic day I thought, let’s give this a try.

The results were an amazingly yummy meal thrown together quickly that was tasty and guilt free because Wild Oats preps sauces and dips are natural, organic and gluten-free. One of the things that I do miss is having already prepared seasoning, spices, sauces and dips so when a friend of mine offered for me to try out her WildTree products. I was all for it. I created a really yummy Shrimp Alfredo Spaghetti Squash recipe that was really feeling and my family love.

Spaghetti Squash Facts

Spaghetti squash “meat” looks like spaghetti strands when cooked, so it is known as “vegetable spaghetti”, “noodle squash”, and “squaghetti”.

When you are looking for it in the store, Spaghetti squash is a long, oblong vegetable that measures between 8 and 14 inches in length, weighs 2 to 3 pounds. It is a variety of the winter squash family and has a mild taste similar to pasta but different texture. This squash variety is often used as a healthful substitute for pasta due to its low carbohydrate levels.3

Spaghetti squash is from China.4 In 1921, it was introduced to Japan by a Chinese agricultural research firm and was brought to the United States fifteen years later. It was commonly planted during World War II but only gained popularity in the late 20th century.

You can add Spaghetti squash to a variety of dishes, like soups,stews, or eaten raw. Serve it as “spaghetti,” and top it with a wide variety of pasta sauces.

Don’t grab a spaghetti squash that is marred with green marks.  It can be stored at room temperature for several weeks.5

Health Benefits of Spaghetti Squash

Spaghetti squash is nutritionally superior to regular pasta it is loaded with vitamins and other nutritional content. Spagehtti squash is very versatile and contains about 457% of the recommended daily intake of vitamin A and 52% of vitamin C,7 which can help prevent free radical damage to cells. It also is packed with antioxidants such as beta-carotene, lutein, and zeaxanthin, which are all linked to healthy vision and optimal eye health. Rich in the B vitamins riboflavin, niacin, and thiamin, which promote optimal cellular function.8 Folate is also found in this bright-colored vegetable. Folate can also help filter out homocysteine from your blood and promote cardiovascular health. A fantastic source of Potassium, a mineral that maintains proper muscle and nerve function, is also present in spaghetti squash, making it helpful for people with high blood pressure. Spaghetti Squash also is a good source of the mineral Manganese, it assists in bone and tissue heath, metabolism, calcium absorption, and nerve function, is another key component.9 Spaghetti squash also contains the essential minerals calcium, iron, phosphorus, and zinc.

If that wasn’t enough reason to consume spaghetti squash is it is a great source of omega-3 and omega-6 fats content. Omega-3 fats are associated with the prevention of inflammation, which may cause heart disease, arthritis, and certain types of cancer. On the other hand, omega-6 fats are linked to proper brain function. It is critical to maintain the ideal 1:1 ratio of these fats. Adding Spaghetti Squash to your diet is a fantastic way to save on calories and get some added essential minerals and vitamins that regular pasta doesn’t have.
