Roasted ChickPeas

Super Easy, High in Protein snack! I have been looking for a high protein healthy snack and made these and they were a hit. May even replace my Air Pop Popcorn addiction.

 

Roasted Chickpeas

5-45 min prep 40 min bake
Ingredients
1 c. Chickpeas (I used dry and cooked them but of course can works too)
1 tbsp. olive oil

1/2 tsp. sea salt

1 tsp. of adobo

1 tsp. garlic powder

Directions:

1.Preheat oven to 400 degrees

2.Place dry beans in 2 cups of chicken broth or water, cook till soft about 35-45 minutes OR open can and rinse drain beans

3.Mix Salt, Adobo & Garlic powder in small bowl and place to the side

  1. Place everything  in a a ziploc bag (beans after cooled), shake it!
  2.  Line cookie sheet with parchment paper

Chickpeas

  1. Pour bag onto parchment paper and spread chic peas evenly

  1.   Bake for 40 minutes

  2. Take out and sprinkle, garlic powder, salt and adobo mix on peas

9.Let cool and eat

Laugh & Learn Smart Stages Car

 

The saying, “they grow too fast”, is truly felt when your the mother of a toddler. My littlest diva just turned one in July and ever since her development has been growing leaps and bounds. The fact that she is the youngest sister of an 11 and 7 year old doesn’t help either. I feel like I was just buying stacking toys, and color/shape sorters and here she is almost 16 months and I am searching pretend toys.  I was so happy to receive some awesome toys that grow with my curious and every day advancing toddler.

We received from Fisher Price two toys, at first I didn’t see the value of the stages but after thoroughly testing them out I do now. Today, as I was going through the toy box to see what toys were consignment store worthy I had an “Aha” moment. Out of all of her toys the Laugh and Learn Stages toys are actually a great investment. When she first started we began at stage 1 (of course) but now she is beginning to progress to about Stage 2  in a matter of 4 months, which is great because I still have about 4-8 more months of use out of these toys.  The Laugh & Learn Smart Stages series is something definitely going on our Christmas Wishlist this year. These developmental progressing toys are going to be my go to when buying toys for my family and friends little ones. They grow with them, genius, finally toy makers are thinking ahead.

At first, I just thought of the stages as buttons to click so I don’t have to hear the little song, after a play session with my 16 month old they are useful.  For example, the purse today I set it on Stage 1 and quickly she mastered the prompts, which were choosing the colors of the shapes. I ask her a color and she would pick it out. Some took a couple attempts but she eventually got it. Then I moved it to Stage 2, I wanted to gauge how smart my little future female president, astronaut, dancer, rock star was in development. (Maybe by the time she grows up she actually could be all those things you never know, doesn’t hurt to dream, right?) The Stage 2 she wasn’t completely ready for, spanish, shapes, numbers but we have some time to grow into that. So, went back down to Stage 1, and now we are working on shapes and colors.

 

Then, I decided to move on to the other Laugh and Learn Smart Stages Car we received, (Now I am in full baby development scientist mode and honestly when you play with a toddler everyday all day using your adult brain instead of your autopilot mommy mode is needed.) She actually initiated playing with the car because she absolutely loves her car. Since the day we put it together she plays with this car at least 2 hours collectively a day. Getting in and out sometimes falling in and out. Jamming shapes in the side, rolling the balls in, throwing the balls, mouthing the balls, lets just say she really likes to play with balls. What she really loves is the keys and the radio. She is pressing the radio, bobbing her head, it’s super cute and lately with her pink little Laugh and Learn smart stages purse on her arm. (Just like mommy.)

It’s fascinating that at the age of 16 months she is already imitating me. I didn’t realize how much I clean until I saw her wiping down her play kitchen from top to bottom. She is just beginning two word combinations but she is still paying attention and watching my every move. I began exploring  her developmental genius with the car. Beginning at Stage 1, which for the car I think she is a Stage 1-2 but not at 3 yet. I “tested” her with the various functions and loved the results. She actually is learning things with these toys, its not like the Red Coupe I played with when I was little this is asking her things and she is responding,yet again, she doesn’t talk all that much. These toys are great and I am definitely getting some for my niece because I would be handing them down to her but since Milah is only on Stage 1 & 2 we have a lot of months to go. The only thing that we might need are some fresh batteries pretty soon but that definitely beats buying a new toy.

I value my time in the word and have been praying on how I can help mom’s find time to study too. When I first started doing bible studies, I was a new Christian and found comfort in book studies, as I grew in my relationship with Christ my thirst for knowledge did too.  After indulging in studying Chapters of the bible. I created my very own study to help others with their quest to armor themselves with the Word of God.

I believe the best way to begin any study is through prayer; pray that God helps you to understand the information. That he opens your mind and your heart to His word and allow you to be a light for God to share it with others in the future.

Knowing the truth will protect you from being misled by others and will empower you to share God’s knowledge.  Take your time with this study, however long it takes.

Finding a better way

Behind every picture is a story; We all know that and looking at the last few years of my life pictures I definitely have one to tell.  August 1, I woke up and decided that I had enough with my current health. I was eating well enough, but I still was over indulging on sugar, my portions were ridiculous and using my boredom as an excuse to nibble on snacks.  I didn’t feel content in the body I was in, it didn’t match the image in my head. So, I decided to do something. I posted about how I found Beyond Fit Mom, and how I was making changes in my life. Well here I am 60 days later and I have totally created a new lifetime habit. I wanted to blog about this because there are a lot of mom’s who have shown the before and after but not a lot that shows the during. Its hard to relate to someone who has already found the results that you seek. I am here (at least for now) everyday doing the work to get the body that I will help me live a healthy lifestyle.

Total Weight Loss So far

Before, I had my third daughter I was visually in good shape but I had horrible eating habits. I also worked out several hours a day, which was great when you have two school age children but when you have a new baby its not that simple. BFM, was essential in my life because it allowed my workouts to be efficient. I was  about 60 pounds overweight and I have a goal to lose it by Christmas. I am very goal driven and it was the only way that I was going to get my life back in order. So, the first 30 days I did the workout followed the nutrition and lost a little less than 14 pounds, my husband was a great motivator and accountability partner. The second 30 days, my husband who is a school teacher and wouldn’t be there to cheer me on so after prayer, I had the God idea to Honor My Temple through a prayer challenge. I partnered with a Fitness Specialist and together we prayed and through social media involved others to help us honor our temple through prayer. It was life changing for me. When I went to God with my issues not only was I stronger and achieved more I grew my relationship in Christ too.

30 Day Isagenix Cleanse

Another, life changing experience I had this month was a 30 day cleanse. I have never cleansed before and after speaking with my friend I was convinced that a 30 day cleanse would be a great way to jump start this change in eating and exercising. I totally thought I was ready, I was not ready at all. The first two weeks, I had a wedding and 2 birthday parties to attend which I was pretty strong willed and did very well I didn’t eat any of the no no foods and only drank water the entire time. Now, I would like to say this was my own strong will but in all actuality it was through prayer that I was able to achieve this feat. Now, the last two weeks were probably the hardest. I was over this restricted lifestyle change, I was ready to indulge, fall is here and all the smells and food were enticing me to quit. It was only through my strength in the Lord that I was able to continue and not submit to temptation. It seems cheeky but I really did pray my way through and I had amazing results.

How did I get here?

In 18 days I lost 6 pounds and 24.75 inches all over my body.  I lost all of this through eating correctly, working out 3 days a week and daily prayer. I want to emphasize there were no wraps, no magic pills, I ate non processed protein and produced and sweated three days a week for 20-30 minutes each day without fail. Even when I weighed 128 pound I did not feel this good. I have so much energy, my memory has improved, I just feel so much better about myself. The best part through this entire journey is that my faith and trust in God has multiplied and I am now living a completely aligned life. I have always sought balance and now I have achieved it and will probably continue down this road for a lifetime.

Spagehtti Squash Taco Bake ( 3 recipes in one)

Taco Squash Bake

Ingredients:

    • 1 spaghetti squash
    • 1/4 cup red bell pepper, chopped
    • 4 cloves of garlic
    • 1/4 cup yellow bell pepper, chopped
    • 1/4 cup green bell pepper, chopped
    • 1/2 cup chopped onion
    • 2-3tbsp of cilantro
    • 1/4 cup green unions chopped
    • 2 tbsp. Extra Virgin olive oil
    • 16 oz. lean ground turkey
    • 4 tbsp. taco seasoning mix
    • 1 cup shredded reduced-fat Mexican-blend cheese
    • 1 cup chunky salsa (see my homemade easy salsa)
    • 1/4 cup plain greek yogurt
    • salt and pepper to taste

Taco Season Mix (Makes like 12 servings)

  • 4 tbsp paprika
  • 2 tbsp. chili powder
  • 2 tbsp ground cumin
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1/2 tsp garlic salt
  • 1 tbsp. oregano
  • 1 tbsp. pepper
  • 1/2 tsp crushed red pepper flakes (optional)

Mix together place in glass jar

Easy Homemade Salsa

3 tomatoes, diced

1/2 onion

4 garlic cloves

2 tbsp chopped cilantro

2 tbsp. seasoned rice vinegar

1 jalapeno, seeded (or not) and chopped for mild salsa seed, and for spicy add seeds and ribs to taste

Directions:

Pulse all ingredients except tomatoes in food processor once minced add tomatoes and stir

Directions:
  1. Preheat your oven to 400 degrees. Cut spaghetti squash in half lengthwise and scoop out seeds. Place squash face down in a baking dish and poke holes in them with a fork. Bake for about 40 minutes or until tender. (For more specific cooking instructions check out my spaghetti squash recipe).
    imageimageMeanwhile chop up the bell pepper,garlic and onion and cook in a skillet for 3-4 minutes. Add in the lean ground turkey and 1 ½ tsp of seasoning. Cook until turkey is browned. Drain the grease and transfer to a large bowl, mix in cilantro.

  2. In a medium bowl mix together the salsa, yogurt, and ½ tsp of seasoning. Set aside.

  4. Once your squash is finished cooking use a fork to shred the squash into noodle looking strands. You will want to drain as much of the liquid from the squash as possible.  (turn oven down to 350 degrees at this point.)

  6. Mix the squash into the large bowl with the turkey and add in 2 ½ tsp of seasoning. Thoroughly stir together.
  7. Combine the salsa mixture to the large bowl.
  8. Transfer mixture to a greased 9×13 baking dish and Sprinkle 1/4 cup of green onions then, sprinkle with remaining ½ cup of cheese.

  10. Bake at 350 degrees until nice and bubbly. About 20 minutes.
